Shave Ice addiction!

So if you have ever been to the Hawaiian islands, or now live here you will know all about the amazing treat they have called Shave Ice. The best way to describe it is like a snow cone, but ten times better. A snow cone doesn’t even compare to all that is a shave ice. Not shaved ice but shave ice, say it with me; Shave Ice.

So what is a shave ice? Well picture light fluffy snow, with whatever syrup your heart desires on it. There is your more average flavors such as strawberry, cherry and grape. Then you have more island flavors such as pina colada, pineapple and guava. You can have up to three flavors on your shave ice or even add a scoop of ice cream on the bottom, then top it off with a snow cap (condensed milk)

I like to consider myself a shave ice expert. Several years ago my husband and I ran a shave ice and ice cream business on the island of Kauai. So I know what it takes to make a good shave ice and I know one when I see one.

Since we have come back to Hawaii, I have tried many places that claim they have the best shave ice, but there is only one I keep going back to. It is in the north shore town of Haleiwa. There are several to choose from on the north shore, but the Aloha General store is number one is my book. It not only have amazing shave ice, but super friendly staff with the Aloha spirit that never disappoints.

They have two shave ice sizes, the regular size and the keiki (kids) size. The regular is $3.00 and the keiki is $2.50. If you’re a kama’aina (local) you get a discount too! They have just about any flavor you can think of, watermellon, bubblegum, strawberry, rootbeer, vanilla, cotton candy, pina colada, grape, cherry and many more. I always choose a combination of pina colada, vanilla and root beer and if the mood strikes I will add a scoop of vanilla ice cream. My kids favorite is strawberry and cotton candy. I have to admit the cotton candy is pretty good. My husband, he gets an extra spoon and steals bites from everyone elses. How convenient!

If you come to Oahu and are looking for the best shave ice on the island go to Aloha General store. You will see other shave ice stores with lines around the building, but believe me it doesn’t mean they are the best. The Aloha General Store is nice also cause it has shaded benches and tables you can sit at and enjoy your shave ice, where the others don’t. Don’t just follow the crowd on this one. Go to the Aloha general store, tell them you read about them on island living and more and tell them Lacey sent you!

Hearty Breakfast to start your day with!

I don’t know about you, but I love breakfast! French toast, pancakes, crepes, waffles, eggs, bacon and sausage. I normally only get a chance to make a hearty breakfast on the weekends for my family, during the week it’s cereal and oatmeal. So when I get a chance to make some yummy on the weekend I jump at it.

I found this recipe online and had to try it. If you like sausage, eggs, hash browns and cheese you will love this!

Sausage-Hash Brown Breakfast Casserole

Here is the recipe:

Ingredients

  • 1 pound mild ground pork sausage
  • 1 pound hot ground pork sausage
  • 1 (30-ounce) package frozen hash browns
  • 1 1/2 teaspoons salt, divided
  • 1/2 teaspoon pepper
  • 1 cup shredded Cheddar cheese
  • 6 large eggs
  • 2 cups milk

Preparation

  • Cook sausages in a large skillet over medium-high heat, stirring until sausage crumbles and is no longer pink. Drain well.
  • Prepare hash browns according to package directions, using 1/2 teaspoon salt and pepper.
  • Stir together hash browns, sausage, and cheese. Pour into a lightly greased 13- x 9-inch baking dish.
  • Whisk together eggs, milk, and remaining 1 teaspoon salt. Pour evenly over potato mixture.
  • Bake at 350° for 35 to 40 minutes.

Breakfast burrito style! Please excuse the paper plate!

We added tortillas and made a breakfast burritos out of it. Here is what I would change though, this recipe makes a lot, well more than we could eat. I would half the sausage and only use one pound. We like a little spice, so I would use the hot sausage. I would also not use all the hash browns as well, it was a bit much. I would keep the same amount of eggs though. You could always add any ingredient you would use in an omlett such as ham, bacon, peppers.

This was a great dish to have for brunch. It was very filling and kept us full until we had an early dinner. We also have a bit of leftovers so we will be heating it up again for breakfast in the morning. What do you all think of this recipe? Would you try it, what would you change? Aloha Friends!

Let me start out by saying thank you for stopping by to read my blog. I hope it will be successful and helpful. I plan on focusing on recipes I find on-line, arts and crafts and places and things I do while living on the Hawaiian island of Oahu. With all my recipes I plan on step by step directions, pictures and a review on how myself and my family liked it and if I would make it again and what I would change. The same will go for all the arts and crafts I do. I see so many wonderful recipes and craft ideas and I wonder if they will turn out as good as they look online or in the magazine.

I may even review movies and music as I see fit on somthing I may really like or dislike. If there is somthing you think I should review please let me know.

I will also post reviews of places I visit while living in Hawaii. I will take picture and post all about what we did, what we liked and what we didn’t like about it.

This should be a fun blog and I look forward to coming up with some wonderful things! Comments are great and if you have tried or been to something I blog about please let me know how it you liked!

Recipe you must try!

Living in Hawaii has many many pluses and not too many negatives. There are so many places to eat, whatever your heart desires we have it, everything except an Olive Garden! I know, scandalous right! Well I was surfing the web as I  often do searching for a great recipe to make up for the fact I can’t just run out and get Olive Garden when I want. Wouldn’t you know that Olive Garden has a recipe on their website for fettuccine Alfredo! I jumped up and down and immediately started on my shopping list. I made it tonight and I was highly impressed!

Here is the recipe:

Prep Time:10 minutes    Cook Time:10 minutes     Serving Size: 6

Ingredients

  1. 1 1/2 cup milk
  2. 1 1/2 cup heavy cream
  3. 1/2 cup imported Parmesan cheese, grated
  4. 1/2 cup imported Romano cheese, grated
  5. 6 egg yolks from fresh jumbo eggs
  6. Salt and black pepper to taste
  7. 3 cups milk
  8. 3 cups heavy cream
  9. 1 cup imported Parmesan cheese, grated
  10. 1 cup imported Romano cheese, grated
  11. 12 egg yolks from fresh jumbo eggs
  12. Salt and black pepper to taste
  13. 4 1/2 cups milk
  14. 4 1/2 cups heavy cream
  15. 1 1/2 cup imported Parmesan cheese, grated
  16. 1 1/2 cup imported Romano cheese, grated
  17. 18 egg yolks from fresh jumbo eggs
  18. Salt and black pepper to taste

Procedures

  1. HEAT milk and cream in a heavy bottom saucepan until it begins to simmer. Turn off heat. Slowly whip in cheese, then remove from heat.
  2. PLACE egg yolks in a separate bowl and slowly whip in a portion of the hot milk and cream mixture. Slowly add egg yolk mixture back into remaining cream mixture. Place back on very low heat and continually stir until simmering. Take sauce off heat so it thickens. (This will increase temperature of egg yolks, known as tempering).
  3. SEASON to taste with salt and black pepper. Serve over your favorite pasta.

This was pretty easy to make. I had a bit of a problem when it came to getting the cream mixture to simmer. It just didn’t want to so the alfredo didn’t thicken as much as I would have liked. I also think it is missing something. It didn’t taste exactly like Olive Gardens did. I also added some pre-cooked chicken slices from the deli section. It was really good even if it didn’t taste exactly like Olive Gardens. I would make it again, but I think I will add some garlic salt or something.

I don’t know about you, but I love Red Lobsters Cheddar Bay Biscuits! I will go to Red Lobster just for those. Thankfully Oahu does have a Red Lobster, but who needs Red Lobster just for some Cheddar Bay Biscuits when you have this recipe?

Cheddar Bay Biscuits

Biscuits:
2 1/2 cups Bisquick
4 Tbsp cold butter
1 cup cheddar cheese, shredded
3/4 cup milk
1/4 tsp garlic powder
Butter Glaze:
3 Tbsp butter
1/2 tsp garlic powder
3/4 tsp dried parsley flakes
Preheat your oven to 400 degrees. Lightly grease or line one cookie sheet with parchment; set aside.

Combine Bisquick with cold butter in a medium bowl using a pastry cutter (I just used 2 forks). Don’t worry about mixing too thoroughly; there will be small chunks of butter in the mix about the size of peas. Add cheddar cheese, milk, and garlic powder. Mix by hand until combined, but don’t over mix.

Drop 1/4 cup portions of the dough onto the lightly greased or parchment lined cookie sheet. Bake for 13-15 minutes in preheated oven until the tops of the biscuits begin to turn light brown.

While the biscuits are baking, melt butter is a small bowl in the microwave. Stir in garlic powder and dried parsley flakes. Use a brush to spread the garlic butter over the tops of all the biscuits. Sprinkle a little kosher salt on the freshly coated biscuits. Makes one dozen.

THe Results!

 

 

I didn’t change a thing in this recipe. It was amazing and tasted just like the biscuits and Red Lobster. I can’t wait to make these again and wow others with my cooking skills LOL!
